Description: "Little goat" is the name of this goat's milk cheese, brother to Reblochon from the Savoyer Alps. Chevrotin has been produced there since the 17th century in accordance with traditional methods, and is made out of raw goat's milk. The special geography of this mountain region is responsible for the unique, herbal flavour, which is also what distinguishes the Chevrotin from its goat cheese relatives of the Loire.

For centuries, farmers let their goats graze on the steep slopes of the Savoyer Alps in the summer months. These alpine goats breed, known for their great climbing, are also known for their good milk. They meadows that they graze on are rich with herbs from May to September which is why their milk is especially aromatic. The remaining month they spend in the valley, where they exclusively feed on hay. The production is done as it always has been - by hand. Finally, the cheese is ripened for at least three weeks on Spruce wood, where it will be rotated three times a week and washed with saltwater.

To ensure that the traditional production is maintained for the future, the Chevrotin was admitted to the family of AOC cheeses in May of 2002 as the 40th member. Now it can have next to its "coat of arms", the AOC seal.
