The AOC family can be happy about a further member, as Morbier recently became the 38th member. The mountain cheese from the region Franche-Comté had to wait for ten years for this moment. The national institute for controlled origin (INAO) needed the time to check if the cheese was able to meet the strict demands of the controlled origin term AOC.
One can immediately recognise Morbier at cheese counters by horizontal stripes made from plant coal, through the cheese. This stripe is connected to the formation of the cheese 200 years ago. Back then, in the cold winter months it wasn't possible to deliver the cow's milk into the village, as the farms were quite secluded. As the milk quantity of only one herd wasn't enough to produce a big Comté-Rades, the farmers produced in the winter, a smaller cheese. They mixed the milk from the morning with milk of the evening, but to avoid a crust forming on the fresh morning curd, wood ash was put on the cheese mass. Then in the evening the milk from the second milking topped off the already existing cheese mass causing horizontal stripes to form. Today, the stripes are made out of plant coal.
Melting, lightly fruity and aromatic are all characteristics of this sliced cheese with beige coloured rind and ivory coloured dough.
