Ossau Iraty is a ewe's milk cheese from the Basque country in the South of France.
This Brebis cheese, has had the AOC seal since 1980 and can only be produced from milk of the Manech naiser ewe and needs to ripen for at least 90 days to develop its nutty flavour.
The 2006 World Cheese Award winner is an artisanal cheese from the Agour Fromagerie, imported solely by Les Roots of Roots Delicatessen in High Wycombe. Ossau Iraty is also available in selected Tesco's, Sainsbury's and Waitrose stores.
